They have since expanded from a small shack in Brenham to the more competitive scene of Houston. We are sure that this move will shake up the BBQ hierarchy of the city. Once you get to the front of the line, you should get the brisket. The jalapeno cheddar sausage has never failed to put the legacy cased meat of Texas to shame either. We doubt that you will find a juicier link in the Lone Star State. The meticulous plating is also impressive and worth a post on your Instagram page.

You might be able to take the Texan out of the Lone Star State, but you cannot take Texas out of him. The state’s barbecue style is the most famous one in the country, so it is only natural to raise an eyebrow at imitators. We are glad to report that ZZQ in Virginia is the real deal. It was launched by a native Austinite who has honored his home state by whipping up the most incredible brisket in the area. They imported their three 1,000-gallon offset pits from Austin Smoke Works. They use a few more herbs to spice up the brisket rub and turn it into their own. It does not deviate all that far from the standard black pepper and salt mix, however. Let us not forget that this is Virginia, which is why they finish the pulled pork shoulder with vinegar sauce and offer sides such as Cajun creamed corn and tomato pie.
